Simon brings together the heat and passion of the Mediterranean with the soul of Asia. Before joining Fera as Executive Chef and partner the Carinthian from the village of Eberstein in Austria has worked with several star chefs. Among others, he worked for “Paco Pérez” in the Miramar restaurant (**), as well as in the “Alkimia” with Jordi Vilà (*).

Respecting local tradition and produce, Simon makes sure he takes advantage of using local produce, Soller Prawns, a highly thought after island delicacy, Bio Dynamic Arbequina Olive Oil, Flor de Sel salt flowers from the nature reserve of Es Trenc to name just a few. Wine lovers can look forward to excellent local wines from small Wineries including the Bio Dynamic Wine selection from the Can Feliu Winery and the Organic/Demeter Fera Brand Son Naava wines.
