Freshness and seasonality are the principles that are at the heart of Vecchio’s cuisine. The dishes are creative and innovative and prepared to excite diners with the local flavours from the Aostan region and further afield in Italy. Locally-sourced ingredients from the nearby markets and small farms are selected carefully including meat, eggs, vegetables and cheeses. The combination of these local ingredients creates dishes that are as visually elegant as they are delicious and that blend different flavours together harmoniously to create a unique and complex flavour. The constantly changing menus follow the seasons and ensure that only the freshest ingredients are used in every dish.
Vecchio Ristoro is located inside an old mill that dates back to the 17th century. It was active until 1960 and the original wheel, millstone and gears are still visible inside the restaurant. The cosy dining room features only seven tables, enhancing the elegant and classic environment for all guests. It is this respect for Italian tradition and of the mill itself that allows the food to speak for itself and highlight the constantly evolving menu.
