Chef Sylvain Belouin was raised in a family of restaurateurs. Being accustomed to the big names in the French culinary world, such as Troisgros, Thorel, and Loubet, the young chef has plenty of gastronomic knowledge. Sylvain has been a JRE member since 2013 with his former restaurant, and now he is back with the same passion and the pleasure of giving great service to his diners. Together with his wife and sommelier Valérie, Sylvain first took over the family restaurant. After many years of working here, they launched their own concept in Pornic, where restaurant Le 21 opened in 2020.
