Grégory Doucey

At the age of 25, chef Grégory Doucey fully converted to his first love: cooking. He finished his culinary education in 9 months and had internships in high-end restaurants in Montpellier.  Next, his gastronomic journey brought him to Chablis, after which he came back to the South of France. In November 2018 he decided it was time for the next step in his career, and he opened his own fine-dining establishment, restaurant In-Fine.

The concept of restaurant In-Fine emerged from years of learning and training in a variety of restaurants in southern France and Burgundy. Focusing on sustainability, the restaurant works with fresh products which come from no further than 200 km of Frontignan.  What’s more, the restaurant has its own 250 square meter vegetable garden where their vegetables and fruits are grown. Chef and owner Grégory Doucey conjures up the most excellent regional cuisine from this, drawing gourmets from near and far.
