A talented Dutch chef with a passion for regional Dutch cuisine
Owner and chef Mike Vrijdag's passion for cooking starts when he decides to follow a bakery course. Mike wants to learn more and joins a chef's training. During his training at restaurant De Leeuw in Lichtenvoorde, he learns that hard work can go a long way. Next, he joins Hotel Frerikshof in Winterswijk and Het Koetshuis in Bennekom, where Mike sees that in addition to a great drive, a chef must also have a great passion for the profession. At Princess Juliana in Valkenburg, his first employer with two Michelin stars, he quickly rises from apprentice to chef de partie. After this, he decides to apply for a job at De Bokkedoorns, where he also becomes chef de partie. At some point, Mike wants to return to the east and joins restaurant Het Koetshuis as sous-chef. Continuity and quality are the cornerstones of this position, which are recognized with a prestigious Michelin star. In 2011 chef Mike Vrijdag opens the doors of restaurant Strandlodge, which was awarded a Michelin star in 2015. In 2020 Mike decides to change things around and transforms the Strandlodge into his current restaurant: LEV. by Mike.
